Make the bacon either in the oven, air fryer, or on the stove top. Set aside.
While the bacon cooks, heat a frying pan over medium heat and add butter or oil to the pan. Once the pan is warm, break the eggs into the skillet. Do not crowd the pan, you may need to cook the eggs in batches.
As the eggs cook, break the yolk with a fork and gently scramble it while leaving it in place on the egg. Once the edges are cooked, flip the egg over and cook on the other side until the yolks are cooked through.
Remove the eggs from the skillet and set aside. Leave the pan on medium heat.
Lay out the four tortillas flat and place one egg, one piece of bacon, and one slice of cheese on one half of each tortilla.
Fold each tortilla in half (like making a quesadilla) and transfer to the same pan the eggs were cooked in (it should still be hot).
Cook on each side for 1-2 minutes or until the cheese is melted and each side is golden brown. Then, enjoy!
For the high protein version
Cook the chicken sausage as directed in the oven or air fryer.
Mix together the cottage cheese, eggs, salt, pepper, and garlic powder and cook on low until scrambled. Leave the skillet on low to medium heat.
Lay the tortillas flat, place a piece of cheese on one half, top with 1/4th of the egg mixture, and then 2 chicken sausages. Fold the tortilla in half.
Put them back on the skillet to toast the outside and melt the cheese.
