Cinnamon Sugar Pancakes

Made with just a few simple ingredients, these cinnamon sugar pancakes are high in protein and give cinnamon roll vibes without the effort. They freeze and reheat well so go ahead and whip up a double batch! Or enjoy right away with a Greek yogurt drizzle.

egg nog

tsp baking powder

tsp vanilla extract

tbsp maple syrup

tsp cinnamon

pinch salt

cup white sugar

0 Heat a large skillet over low to medium heat with a bit of butter. 1 Blend [wprm-ingredient text="1/2 cup cottage cheese" uid="1"], [wprm-ingredient text="5 eggs" uid="2"], and [wprm-ingredient text="2 tbsp maple syrup" uid="5"] in a blender for 30 seconds. 2 In a large bowl, mix the [wprm-ingredient text="1 cup all-purpose flour" uid="0"], [wprm-ingredient text="2 tsp baking powder" uid="3"], [wprm-ingredient text="1/2 tsp vanilla extract" uid="4"], [wprm-ingredient text="1/2 tsp cinnamon" uid="6"], [wprm-ingredient text="1 pinch salt" uid="11"], and blended cottage cheese mixture until combined. 3 In a separate bowl, prepare the cinnamon sugar topping by mixing [wprm-ingredient text="1/4 cup white sugar" uid="9"] with [wprm-ingredient text="1 tbsp cinnamon" uid="10"]. 4 Pour about 1/3 cup of batter into the skillet. Sprinkle about 1 tbsp cinnamon sugar on top of the batter. Cook for roughly 2 minutes on each side. You'll know it's time to flip when a handful of bubbles start to appear in the batter. 5 Repeat with all the batter. You should make about 8 pancakes that are 5" diameter.
