0 Preheat the oven to 425 degrees and line a sheet tray with parchment paper. Cut the [wprm-ingredient text="1 lb mini peppers" uid="1"] in half length wise and remove the seeds. 1 Add the [wprm-ingredient text="4 oz goat cheese" uid="4"], [wprm-ingredient text="3/4 cup parmesan" uid="5"], [wprm-ingredient text="½ cup cottage cheese" uid="6"], and [wprm-ingredient text="2 cloves garlic" uid="7"] to a blender and blend until mostly smooth. A food processor works well for this too. 2 In a bowl, mix the cheese mixture with [wprm-ingredient text="¼ tsp salt" uid="3"], diced [wprm-ingredient text="1 jalapeno" uid="8"], and [wprm-ingredient text="¼ tsp pepper" uid="9"]. 3 Stuff each pepper half with 2ish tablespoons of the cheese mixture. 4 Spray with olive oil and then bake for 10 minutes or until golden and melty.
