fudgy cottage cheese brownies

After dozens of rounds of testing my recipes and others, I have finally nailed a healthier brownie that is actually better than boxed! These are made with cottage cheese and have double the protein of a standard brownie. They are fudgy, easy to make, and so, so delicious!

What you need

2 egg nog

1 tsp vanilla extract

2 dark chocolate bar

1 cocoa powder

½ cup coconut sugar

¾ cup oat flour

1 tsp baking powder

1 brewed coffee

3 tbsp butter

¼ tsp salt
Instructions
1 Preheat oven to 350 degrees. Prepare an 8x8 baking dish by greasing it with butter and dusting with cocoa powder, or lining with parchment paper. I use a glass dish and didn’t need to do anything. Melt one of the [wprm-ingredient text="2 hu chocolate bar" uid="4"]s in 30 second increments in the microwave (or do this with 1/4 cup of chocolate chips) until melted. Stir in between each 30 seconds. 2 Blend together the [wprm-ingredient text="¾ c cottage cheese" uid="1"], [wprm-ingredient text="2 eggs" uid="2"], [wprm-ingredient text="¼ tsp salt" uid="11"], [wprm-ingredient text="1 tsp baking powder" uid="8"], [wprm-ingredient text="¼ c brewed coffee" uid="9"], and [wprm-ingredient text="1 tsp pure vanilla extract" uid="3"] until all the curds are gone. Then add the melted chocolate, [wprm-ingredient text="½ cup coconut sugar and" uid="6"] [wprm-ingredient text="½ c cocoa powder " uid="5"]and blend until smooth. 3 In a large bowl (or just in the blender, although I find this difficult), mix the [wprm-ingredient text="¾ cup oat flour" uid="7"], [wprm-ingredient text="3 tbsp melted butter" uid="10"], and diced one of the [wprm-ingredient text="2 hu chocolate bar" uid="4"]s until well combined. I like to press it in with a spatula to make sure the oat flour is fully absorbed. It’s a thick batter! 4 Spread into an 8x8 pan and bake for 25 minutes or until the edges are set and the top is just starting to crack. We really want this underbaked for the best texture!! If you insert a toothpick into the center, it will likely still come out with stuff on it, but if you insert it into the side, it should come out clean. Let it set for 5-10 minutes before diving in (also very important for gluten-free baking). Then enjoy!View original recipe
