After becoming a favorite of our weekly meal plans, we knew these no-bake protein cookies deserved a spot on the website! Made with just 6 ingredients, these boast 8 grams of protein per cookie and are simple enough for the kiddos to help (or make them!). The only issue with them is that you won't want to stop eating them!

cup shredded coconut

cup peanut butter

cup milk chocolate chips

tsp salt

cup hemp seeds

Microwave for 30 seconds, stir, then repeat two more times (stirring each time) until fully melted and smooth. 1 Mix the ingredients: Add the [wprm-ingredient text="1.5 cups quick rolled oats" uid="0"], [wprm-ingredient text="3/4 cup shredded coconut" uid="1"], [wprm-ingredient text="1/2 tsp salt" uid="4"], and [wprm-ingredient text="3/4 cup hemp seeds" uid="5"] to the bowl. Stir until everything is evenly combined. 2 Scoop the cookies: Line a baking sheet with parchment paper. Use a cookie scoop to form 12 haystack-shaped cookies (or 24 smaller ones for kid-sized portions). 3 Chill: Place the tray in the freezer for 15 minutes to set, then transfer cookies to an airtight container and store in the fridge for up to 2 weeks.
