What you need

red onion

cup non-fat greek yogurt

Instructions
1 Toss the diced [wprm-ingredient text="2 small sweet potatoes" uid="2"] with [wprm-ingredient text="1 teaspoons olive oil" uid="3"], [wprm-ingredient text="2 teaspoons maple syrup" uid="4"], [wprm-ingredient text="¼ teaspoon salt" uid="5"], and [wprm-ingredient text="¼ teaspoon black pepper" uid="6"]. Pour these onto one half of a lined sheet tray or on your air fryer tray. In the same (now empty) bowl, toss the [wprm-ingredient text="1 can corn or 1½ cups frozen corn" uid="8"] with [wprm-ingredient text="½ teaspoon olive oil" uid="9"], [wprm-ingredient text="¼ teaspoon salt" uid="10"], and [wprm-ingredient text="¼ teaspoon black pepper" uid="11"]. Spread this on the other side of the tray. Air fry at 375F for 10-15 minutes, or bake at 375F for 15-20 minutes, until the sweet potatoes are tender and starting to caramelize. 3 While the vegetables cook, make the street corn sauce: mix the [wprm-ingredient text="½ cup plain non-fat Greek yogurt" uid="13"], [wprm-ingredient text="2 tablespoons mayo" uid="14"], [wprm-ingredient text="½ cup cotija cheese" uid="15"], diced [wprm-ingredient text="¼ red onion" uid="16"], diced (optional) [wprm-ingredient text="1 jalapeño" uid="17"], chopped [wprm-ingredient text="1 handful fresh cilantro" uid="18"], [wprm-ingredient text="juice of 1 lime" uid="19"], [wprm-ingredient text="1/2 cup black beans" uid="25"], [wprm-ingredient text="¼ teaspoon salt" uid="20"], and [wprm-ingredient text="¼ teaspoon black pepper" uid="21"] in a large bowl. Set aside. 4 Cook the burgers: grill or pan-fry the patties to your liking. If using ground beef, brown in a skillet over medium-high heat with the ketchup, mustard, salt, and pepper mentioned above until cooked through. 5 When the corn is done, stir it into the street corn sauce. 6 Build each bowl: sweet potatoes on the base, burger or ground beef on top, a generous scoop of street corn, and avocado if using.
