The Best Chimichurri Meatballs

These chimichurri meatballs are easy and quick to make with fresh herbs and a tasty hack to add more flavor to your meatballs. Instead of adding lots of seasoning to our meatballs, we use the chimichurri sauce to flavor the meatballs! This saves on ingredients and time.

cup cilantro
cup mint leaves

cup avocado oil

cup lime juice

tbsp honey

tsp salt & pepper

lb ground beef
egg

cup panko breadcrumbs

0 Preheat the oven to 400 degrees F. 1 Make the chimichurri sauce by blending [wprm-ingredient text="1 tbsp garlic" uid="8"], [wprm-ingredient text="1/2 jalapeno pepper" uid="9"], [wprm-ingredient text="1/2 cup parsley" uid="10"], [wprm-ingredient text="1/2 cup cilantro," uid="11"] [wprm-ingredient text="1/2 cup mint leaves," uid="12"] [wprm-ingredient text="1/3 cup avocado oil" uid="13"], [wprm-ingredient text="1/4 cup lime juice," uid="14"] [wprm-ingredient text="1 tbsp honey" uid="15"], and [wprm-ingredient text="1/4 tsp salt and pepper" uid="16"] in a blender. Alternatively, you can finely mince everything with a knife and then mix it all together. 2 Make the meatballs in a large bowl by mixing together the [wprm-ingredient text="1 lb ground beef" uid="0"], [wprm-ingredient text="1 egg" uid="1"], [wprm-ingredient text="1/3 cup panko breadcrumbs" uid="2"], [wprm-ingredient text="1/2 tsp salt" uid="3"], [wprm-ingredient text="1/4 tsp pepper" uid="4"], and [wprm-ingredient text="2 tbsp chimichurri sauce" uid="5"]. 3 Scoop 16 meatballs onto a sheet tray and bake for approximately 20 minutes (or until they reach an internal temperature of 160 degrees). 4 Remove the meatballs from the oven and serve them up with the remaining chimichurri sauce on top.
